Pho Sure, An Authentic Vietnamese Restaurant in the SCV
Pho Sure’s menu was created as a collaboration of two decades of Vietnamese cooking and dining experience between the owner, Nina Tran and her head cook, Danny Ly. Both Tran and Ly have worked and co-owned other Vietnamese restaurants in the San Gabriel and San Fernando Valleys. Many of the recipes used at Pho Sure result from making and tweaking various other recipes used in their own personal cooking at home and elsewhere. Nina understands both her native and the American palate; as such, she is able to create a mixture of both traditional and contemporary items on the menu.
Pho Sure’s signature item is the beef noodle soup known as pho (pronounced fuh). The key to this item is the broth. Many restaurants use bouillon, which is a concentrate of the actual stock, mixed with water. The use of bouillon is common because it cuts down on cooking time which in turn saves gas and lots of money but it remains a short cut and short cuts generally do not make a great product.
Pho Sure never uses any bouillon and always start their broth with water and beef bones made from scratch every day, using numerous other natural ingredients added at different times to create not just the taste but the true smell of pho broth. Marinated meats, fatty flank and brisket, are cooked in the broth but then taken out to be cut leaving flavors that cannot be substituted by any bouillon. The broth is cooked for hours and then strained leaving a clear, fragrant and flavorful soup for noodles and other items.
