5 large potatoes of uniform size, peeled
2/3 cup chopped fresh parsley
2/3 cup oil
2 eggs hard-boiled and chopped
2 large onions, peeled and thinly sliced
1 teaspoon salt
1/2 pound ground meat
1/4 teaspoon ground black pepper
2 tablespoons tomato paste
1 cup tomato juice
1. Preheat the oven to 350 F.
2. Wash and peel the potatoes. Cut off potato tops, set aside and stand potatoes up straight. Hollow out potatoes with a peeler, leaving 1/2-inch thick shell.
3. Brown the potatoes in a non-stick skillet in 1/4 cup oil.
4. Brown the onion and meat in the remaining oil. Stir in tomato paste, parsley, eggs, salt, and pepper. Mix thoroughly and continue cooking for several minutes.
5. Fill the potatoes with the stuffing, replace tops and arrange them in an ovenproof dish.
6. Mix tomato juice with beef broth, pour the mix over and around the potatoes.
Now you can cover the pan and bake in the oven for one hour, basting them occasionally with pan juice.
