Dr. Weston Price was a dentist.  In the early 1900’s, as the industrial revolution took hold and people began eating processed foods, he noticed an incredible increase in tooth decay in his practice.  This simple but profound finding led him to begin a journey around the world to research why native populations, who ate traditional foods, exhibited perfect teeth into old age.  He also discovered they exhibited perfect physical health.
Research took him to remote tribal communities around the globe: Swiss, Eskimo, African, New Zealand, and more.  What he discovered made Price a recognized authority on the role of foods in their natural form and the development of degenerative illnesses as a result of the addition of processed foods to your diet.
Dr. Price noted striking similarities in the traditional diets:
• Natural, unprocessed, organic foods that contained no sugar except for the occasional bit of honey or maple syrup.
• People ate locally grown, seasonal food that grew in their environment.
• They ate unpasteurized diary products, and all of them ate fermented foods.
• A significant portion of their food was eaten raw.
• All of the cultures ate animal products, including animal fat, and often, full-fat butter and organ meats.
Upon analysis, Dr. Price also found that the native diets contained 10 times the amount of fat-soluble vitamins, and four times the amount of calcium, minerals and water-soluble vitamins compared to Western diets at that time.  Their intake of omega-3 fats was 10 times higher than in today’s diet and their diets were rich in enzymes.
