Spring is here, and I find myself drawn to the outdoors.  I love working in the yard, grilling on the bar-b-q, and eating on the patio.  I especially enjoy the freshness of locally-grown produce, and it doesn’t get much more local than my very own herb garden.
The first three things to consider when planting a garden are location, location, location.  Plant your herb garden in a sunny spot since herbs grown in full sun tend to have denser foliage, darker color, and higher levels of essential oils that provide their unique flavor.  I like to plant my herbs close to the kitchen so I can enjoy them daily. 

The next thing to consider is soil.  Herbs are just like any other plants and prefer healthy, loose or friable soil.  Good drainage is an absolute must.   Soil can be improved by mulching the ground heavily after planting.  Using the nutrients from decayed plants reduces the need for fertilizer thus keeping your garden organic.

Now that you know some basics about how to set up your garden, the fun part is to decide what goes into it!  If you are just starting out, you will want to start with the basics that will satisfy most recipes.  These estimates are per square foot and are based on the needs of a family of four who cooks often.

Chives:  3 to 4 plants       
Bay: 1 plant                    
Dill:  4 to 6 plants   
Thyme:  4 plants         
Tarragon:  4 plants  
Oregano:  2 plants       
Mint:  1 plant         
Parsley:  4-6 plants   
Rosemary:  1 plant
Sage:  2 plants               
Basil:  4-8 plants

Using fresh herbs from your own garden is the ultimate reward for all your hard work.  You will find that it is almost impossible to use all of the great bounty these simple plants provide.  Drying herbs and storing them to use later (especially during the winter) is another great way to enjoy your garden.  You will not only find planting an herb garden peaceful and enjoyable, but you will also see how economical it truly can be.
