Japanese Sake is an alcoholic beverage that results from fermenting rice with rice koji and water. These ingredients are found in abundance in Japan. Only the finest selected rice and hard spring water from highland valleys are used for fermentation.
There is perhaps no alcoholic beverage other than Sake that can be enjoyed at a variety of temperatures ranging from hot to cold. The temperature you choose depends on the type of Sake, the time and the season. The traditional way to drink Sake is to serve it “Kan-zake or Hot Sake,” warmed. The proper temperature is from 100 F to 120 F, depending on one’s taste. But remember, kan-zake should be warmed, never boiled. Another way of serving Sake is cold or chilled. The temperature should be around 46 F, which can be served directly from the refrigerator. Cold Sake is totally refreshing and its subtle aroma gives a richness of taste. Sake goes well with traditional and contemporary tastes. The flavor of Sake has developed along with traditional Japanese foods. Whenever you eat Japanese foods, treat yourself to a glass of sake. The flavors enhance each other making the food taste better, and the sake taste better. Generally speaking, rich Sake is good with rich or heavy-flavored foods, such as tuna, salmon, sea urchin, eel or beef steak. Sake is good with light taste foods such as squid, octopus, white fish, seafood salad, poki and seafood pasta.
