Spinach Narcissus
3 pounds fresh spinach
6 tablespoons olive oil or butter
¼ teaspoon salt
¼ teaspoon black pepper
2 large onions peeled and finely chopped
1 clove garlic peeled and crushed
4 eggs
Steam spinach in a steamer for 10 minutes
Brown onions in the oil until golden then add garlic and cook briefly. Stir in spinach and season with salt and pepper. Mix well and cook over medium heat, spread out evenly. Break the eggs one by one in a bowl and pour onto the layer of spinach. Do not mix the eggs. Cover and cook over very low heat until the eggs have set. Transfer to serving platter and serve immediately.
