Croeso Again (That’s “Welcome” in Welsh). For those of you just tuning in, my name is Denise Carbone (formerly Denise McCarthy) and my husband Joe and I run The Welsh Baker. We are America’s premiere purveyors of Welsh Cakes west of the Mississippi. We make our cakes right here in Santa Clarita and we sell them by the thousands at fairs, festivals and events throughout the Western States. What is a Welsh Cake? I’ve heard that question at least a thousand times! Welsh Cakes are a unique Celtic treat from Wales, a tradition passed down thru the generations in Welsh families. They are a griddled cake, not baked, which is the key to their unique taste and texture. I’ve been griddling cakes using making my family recipe since I was a little girl growing up in Wales.
