What constitutes a product even being called ‘yogurt’? Simple: the words “live and active cultures.” The living organisms Streptococcus Thermophilus and Lactobacillus Bulgaricus usher the pasteurized milk from the ‘milk’ stage to the ‘yogurt’ stage during fermentation. The basic food, milk, is actually transformed into a healthier, more beneficial food. The National Yogurt Association (NYA) has an exemplary program called the “LAC Seal” Program (Live & Active Cultures).
In order to be allowed to display the NYA’s “LAC Seal,” frozen yogurt must meet their criteria of at least 10 million live and active cultures per gram. This is considered, in the words of the NYA, “the industry validation of the presence of significant levels of live cultures.” In addition, the NYA states: “there are products in the marketplace that take advantage of yogurt’s healthful image, but that do not contain live and active cultures.” For example, powdered yogurt products, mixed with water before being poured into the self-serve machine, do not contain these live and active cultures and therefore Dannon never uses or manufactures any powdered yogurt. And this brings me to the exact point of why we are proud to serve only Dannon frozen yogurt.
The NYA’s “LAC Seal” minimum requirement of 10 million cultures per gram is exceeded multiple times over, as Dannon’s frozen yogurts contain 100 to 200 million cultures, per gram of beneficial live and active yogurt cultures and our tart frozen yogurt contain 300 to 400 million cultures per gram of beneficial live and active yogurt cultures! 30 to 40 times the NYA’s minimum! These include Dannon’s yogurt cultures: S. thermophilus, L. bulgaricus, L. lactis, L. acidophilus, and Bifidobaterium. These are astonishing levels! And our Dannon yogurt is never heat-treated after culturing, thereby making certain that the maximum levels of live and active Probiotic Cultures are making their way into your cup here at Planet Yogurt.
