Farm to table is a movement that is concerned with producing food locally and getting it delivered to the consumers. It is linked and promoted by many in agriculture and the restaurant communities. It is also associated with organic farming, sustainable agriculture and community-supported agriculture. So what does this mean?

It means you get the freshest ingredients in the food you eat at your local restaurants. When a restaurant is involved in farm to table or farm to fork you are guaranteed they are buying the produce directly from farmers, usually local!
This movement began because of the attitudes towards food safety, food freshness, seasonality of food and small-farm economics and because of the scarcity of fresh, local ingredients, the poor flavor of ingredients shipped from a distance and the poor nutritional integrity of shipped ingredients. And, with the invasion of genetically modified foods into our economy and the disappearance of small, family farms and of heirloom and open-pollinated fruits and vegetables this movement burst onto the scene and has gathered a welcome audience in restaurants and cafes! You can’t go wrong with seasonal, organic fresh vegetables and fruit.
The chefs involved in farm to fork have become increasingly reliant upon extremely fresh ingredients and on traditional farmhouse cooking with its emphasis on freshness, local availability and in its simple preparations.
Because local food doesn’t have to travel long distances, it is grown to be tasty and healthy and is also healthy for the environment. Not only are restaurants, the producers and consumers for farm to table but families and schools are springing up and getting into the movement.
This is not a food fad, it is a movement and one in which you are getting the best and most out of it!  So when you go into your local favorite restaurant that takes part in farm to table/farm to fork this means that generally the menu is ever-changing thus allowing their menu to change and revolve around what is fresh and in season. So, if your favorite halibut tacos weren’t on the menu then they may have been replaced with a fish or vegetables that are now fresh and in season.
And it gives you an opportunity to try something new or a bit different. Change is good, so enjoy!
