The New Taste of Indian Cuisine
Indian cuisine includes a very wide mix and variety of regional cuisines native to India. And, these cuisines will vary from each other and will use locally available spices and herbs, vegetables and fruits from that particular region. Indian food can be influenced by many things including religious and cultural choices and traditions.
For instance, there is vegetarianism which is influenced by religious beliefs and continues to grow as a dietary direction in Indian culture. There are also Asian influences on North Indian cuisine from the years of Mughal rule. Indian cuisine is fast and evolving and is a result of the countries influence with other countries.
The many staples of Indian food were generally introduced by the history of this nation and its trade with other countries. For example the potato which is a staple of the Indian diet was brought to India by the Portuguese who also introduced other items such as chillies. Spices were bought from India and traded around the world from Europe to Asia, as well as influencing other cuisines around the world. Other staple foods of the Indian diet would be pearl millet(bajra) rice, whole-wheat flour and a vast variety of lentils, most often red, toor(pigeon peas),urad(black gram), mung beans. Spilt lentils or dal are used extensively.
Many dishes are cooked with vegetable or peanut oil, mustard oil, coconut oil and ghee which is butter based. A wide variety of meats are used in Indian cooking. The most common meats used are chicken and lamb but fish and beef are consumed in certain areas of India but they are not widely eaten by the Indian population. The spices of India are what are most widely thought about when thinking of Indian food. The whole and powdered chili pepper, black mustard seeds, cardamon, turmeric, cumin, coriander, ginger and of course, garlic permeate Indian cuisine. The spice mix garam masala is very popular and is a powder that includes five or more dried spices such as cardamom, cinnamon, and clove. But, each culinary region does have their own distinctive blend and many chefs have their own blend as well.
