Oui, Oui….. Crepes Please!

 What is a crepe you ask? Well it is a very thin pancake, which is usually made from wheat flour or buckwheat flour. The word crepe is French in origin but they are widespread throughout France, Belgium, Canada, as well as, North Africa and South America.  The crepe is served with a wide range of fillings from sweet to savory! A crepe is made by pouring the batter into a frying pan or crepe pan with a pat of butter or oil. The batter is then spread evenly over the pan with a tilting motion so the batter can be evenly distributed.  The batter’s consistency must not be too thick and the pan cannot be too hot. The cooking process is usually only 30 to 60 seconds until the cooked side looks somewhat like the surface of the moon, then it ‘s turned over to cook the other side. You can do so much with the crepe, it is very versatile.
Sweet crepes are typically made with wheat flour while the savory crepe is made with non-wheat flours such as the buckwheat flour. Of course the batter can also consist of ingredients like butter, eggs, milk, salt and sugar. The most common savory fillings for a crepe are ingredients such as cheese, ham, vegetables, like mushrooms, artichokes, etc. and meats like chicken or beef. These ingredients are then added to the center of the crepe and are served with the edges folded over  the center.
If you are making sweet crepes these can be made for either breakfast or for dessert. Sweet crepes can be filled and topped with such toppings as, Nutella spread, jams or preserves, powdered sugar or maple syrup, whipped cream, custards and fruit. Most people are familiar with the crepe Suzette, which is a crepe with lightly grated orange peel and liqueur which is usually lit upon it’s presentation! The Mille crepe is a French cake which is made of many crepe layers. The word mille means, “ a thousand” which in turn implies the many layers of the crepe… yum!
