Barbecue is Finger Licking Delicious!
Barbecue is an important part of the history of this great country. It refers to the technique of cooking meats for long periods of time at low temperatures with smoke from a wood fire. This particular form of cooking adds a unique and special taste to the meat.
Many states claim they have the best BBQ and rightly so! North Carolina BBQ is no exception to that rule. North Carolina has two distinct types of barbecue that have progressed over the last few hundred years: Lexington style and Eastern style. Both are pork-based barbecues but differ in the cuts of pork used and the sauces that they are served with.
Lexington style barbecue or Piedmont as it is sometimes referred to uses a red sauce that is seasoned with ketchup, vinegar, pepper and other spices that will vary from recipe to recipe. This style of BBQ uses the pork shoulder section of the pig. This barbecue can range from slightly sweet to hot and spicy. The style of sauce also serves as the base for the red slaw served. This is a coleslaw made by Lexington-style barbecue sauce in place of mayonnaise.
Eastern style barbecue is the whole-hog style of barbecue where the entire pig is barbecued and the meat from all the parts are chopped and mixed together. The Eastern style BBQ sauce is a vinegar and pepper based sauce often simply using cayenne pepper and with no tomatoes at all! The Eastern style slaw replaces the ketchup with mayonnaise. Of course, many people use pork ribs which is a common substitute to the two styles of North Carolina barbecue and consist of the Baby back ribs and spareribs. There are a variety of other meats and cuts including beef and chicken that are found in this type of barbecue, as well as, other types of barbecue that can be found amongst the state and country that feature North Carolina BBQ.

From Alabama, California, the Carolinas, Hawaii, Kansas City, Kentucky, Memphis, Oklahoma, St. Louis, Texas and Virginia all have barbecue and all are delicious!
