For the Love of Sushi!
Ah Sushi! The love of sushi and it’s history began around the 8th century and was first developed in Southeast Asia as a means of preserving fish in fermented rice, keeping the meat fresh without refrigeration. It spread through China then through Japan. Around ten centuries later people started adding vinegar to their sushi to aid in the fermentation process. And in modern times, it is an early form of fast food associated with Japanese culture. Sushi refers to a dish of vinegared rice served with various fillings and toppings, which may include raw fish.
Sushi was first served in the United States in the early 1900’s after the influx of Japanese immigrants. It seems the peak of the dish was at its highest in social circles and Japanese-themed social gatherings across the US.
The first American Sushi restaurant appeared in the 1960’s in Los Angeles and New York where. Large amounts of fish from Japan where transported commercially for the purpose of making sushi on a regular basis. With the advancement of refrigeration, the ability to ship fresh fish over long distances produced a demand for premium sushi and Sushi bars opened throughout the United States.
The California roll was invented in Los Angeles by substituting a slice of avocado in place of the seasonal toro, fatty tuna in the traditional make roll. In the past 20 to 30 years sushi has been recognized as a healthy alternative and sushi restaurants have flourished. Sushi is a common meal in many parts of the world. The sushi craze really hit America in the 80’s when chefs took more liberties with ingredients and flavors. And, just like that a sushi roll could be filled with anything from cream cheese, flavored mayonnaise, cooked fish, and even fruit! Today sushi is everywhere from restaurants, to airport terminals and even your local supermarket. Nowadays a spicy tuna roll is as easy to come by as a hamburger or hot dog.
