The Nutritional Value of Eggs
Eggs are classified as “super foods” and have been consumed as far back as 700 B.C. Columbus is believed to have carried to the New World the first of many chickens that are now related to our egg production. Eggs are loaded with nutrients and have many health benefits. Besides being incredibly nutritious they have lots of vitamins and minerals, which include Vitamin D, E, K, B6, Calcium and Zinc, as well as high-quality protein and antioxidants all for 70 calories! One egg has varying amounts of 13 essential vitamins and minerals plus six grams of high-quality protein. The nutrients found in eggs help play a role in, your muscle strength, brain function, eye health, healthy pregnancy and so much more. The high quality protein in eggs can reduce hunger and facilitate weight loss as well as help with weight maintenance.
Eggs meet a variety of nutrient needs of children and adults. Research on cardio metabolic health has shown that more than 40 years of research has demonstrated that healthy adults can enjoy eggs without significantly impacting their risk of heart disease. For a few decades eggs did have a reputation because of it’s high cholesterol content but in 2000 the American Heart Association revised its dietary guidelines and gave healthy adults the green light to enjoy eggs once again.
Eggs have always been very cost-effective and versatile. They are good not only for breakfast but make an excellent quick lunch, supper or for your next brunch. Eggs can be made into sweet or savory dishes and many finicky kids will eat eggs! With the humble egg you can make everything from scrambled, over easy, fried, omelets, classic hard-boiled to crepes, quiches, egg casseroles, and frittatas and really so much more! So the next time you are in a hurry go to your refrigerator and open your egg carton! You are just minutes away to a healthy and satisfying breakfast, lunch or dinner.
