Who is in The Mood for Sizzling Fajitas?
The end of summer will be here before you know it and who really wants to turn on their oven? Get out and grill before the summer is over and one dish that you could do indoors, as well as, outdoors is fajitas! Yum!
Fajitas are commonly referred to any type of grilled meat, or little strips of meat and usually served as a taco on a corn or flour tortilla. The term originally referred to the cut of beef used in the dish which is know as skirt steak. But, of course, meats also used are chicken, shrimp, pork and all cuts of beef. In Mexican restaurants the meat is typically cooked with onions and bell peppers. The most popular condiments served along with fajitas are shredded lettuce, sour cream, guacamole, salsa, pico de gallo, cheese and tomatoes.
The history of fajitas goes as far back as the 1930’s in the West and South ranches of Texas and is considered a Tex-Mex term or Tejano. The dish became popular in restaurants and businesses in Houston, Austin, Texas and in San Antonio. It wasn’t until the 1990’s that restaurants started using the word fajitas in their marketing and in most recent years the term has become popular in American dining establishments as well as, in American home cooking. In most restaurants the fajita dish is brought table-side sizzling on a metal platter or skillet with the tortillas and condiments.
There are so many flavorful and quick recipes for fajitas to make. Not only meat fajitas but vegetarian fajitas too! Fajitas are not only tasty but really delicious and filling! And, most children love fajitas not only because of the presentation but because they can pick and choose how to fill their own tortilla and make it their own.
