Now featuring: Enchiladas de Pato (duck confit enchiladas) this French preparation is similar to the process of making carnitas. We start with freshly made duck confit and simmer it in our mole negro then wrap it on homemade thin flour tortillas to highlight the flavors of both duck and mole, when the enchiladas are assembled, we pour a little more mole sauce and garnish with shredded lettuce and red onions for a crisp and fresh touch.
