Each week at Newhall Refinery, Chefs Dustin Boole and Iris Sifuentes create a new three-course menu inspired by seasonal cuisine. The fusion cooking uses only what is fresh and in-season, with a focus on unusual taste pairings. The laid-back atmosphere is described as being similar to ‘enjoying a dinner at a good friend’s house’, except in this case the friend is a top-notch chef and the house is a cozy, elegant spot in the heart of Santa Clarita.
This open-kitchen restaurant by owners Simon and Shannon Mee shifts the focus to vegetables and prime meats – reworking the menu as often as is needed around seasonal offerings. The revolving options are based on a rotating selection of California’s finest vegetables, seeds, grains, legumes, scratch-made sauces and quality meats whilst visually reflects the restaurant’s equally modern and stylish take on dining.
