In the traditional central part of Italy the cuisine uses ingredients that feature tomatoes, all kinds of meats, fish and pecorino cheese. In the region of Tuscany pasta, and especially parpadelle is served with meat sauce. Southern Italy you are more inclined to see the use of tomatoes, fresh and cooked in their tomato sauce. Peppers, olives, olive oil, garlic, artichokes, capers, ricotta cheese, eggplants, zucchini and anchovies, sardines and tuna are important ingredients to this local cuisine.
