If you’re in the mood for appetizing Mexican food, Cabo Cabana Fresh Baja Grill is the place to be.  This quick serve Mexican Grill focuses on serving only the freshest Baja and authentic, Bajathentic style Mexican food, freshly prepared and perfect on the taste buds.  Owners Nicolas and Karen Ortiz, along with their staff, provide friendly service and scrumptious food. “All our food is made fresh and made to order,” states Nicolas and Karen. We began the afternoon with some warm and crispy tortilla chips accompanied with Cabo Cabana’s signature salsas made fresh daily, using roma tomatoes, fresh herbs and fire roasted chilies.  From mild to spicy, each bite was bursting with flavor. Nicolas and Karen brought out some fresh guacamole, made with Hass avocadoes and seasoned to perfection.
Shortly following, Nicolas brought out the Cabo Grande, a taco salad as pleasing to the eye as it is delicious.  This flour tortilla shell was filled with seasoned chicken; fresh mixed greens, black beans and was topped with guacamole, sour cream, pico de gallo, green onions and cheese.  It makes for a perfect light meal.  You can substitute the chicken for charbroiled steak or try it with seasoned shrimp.
Next, Nicolas brought out one of Cabo Cabana’s popular plates, enchiladas with a side of refried beans and rice, for us to try.  It’s no surprise why the enchiladas are popular with customers, they are absolutely flavorful!  The warm tortillas filled with charbroiled chicken and topped with zesty homemade enchilada sauce and cheese had just the right taste.  Choose from cheese, chicken, beef or even shrimp.
Next on the menu to try were two taco dishes.  One was the beautifully plated shrimp taco.  The bountiful tiger shrimp was grilled and seasoned to perfection and mixed with fresh cabbage, accompanied with a delectable white sauce that roared with flavor.  The shrimp was fresh and succulent.
We also tried the delicious crispy-shelled taco filled with shredded chicken, topped with fresh lettuce, tomato and cheese.  Add a signature salsa to your taco to spice it up.
As if that weren’t enough food, Nicolas brought out yet another popular Cabo Cabana meal – the Cabo Quesa Grande.  The quesadillas were simple, but oh so good, and the portion sizes are huge!  Large grilled flour tortillas filled with melted jack and cheddar cheese with your choice of charbroiled steak or chicken, topped with sour cream, guacamole and fresh pico de gallo, you’re sure to like this dish!
Last on the menu was the ever so tasty tamale dish.  A family recipe, the tamale was sweet and savory and was filled with flavorful mouthwatering meat.  It was topped with a savory sauce and served with warm refried beans and rice.
