Owners Nicolas and Karen Ortiz bring a wealth of knowledge and restaurant expertise to make your dining experience at Cabo Cabana a great one.  With 25 years of experience in the restaurant industry, Nicolas began working in 1985 as a bus boy, eventually working his way to restaurant manager.  Prior to purchasing Cabo Cabana Fresh Baja Grill (located in the Valencia Marketplace) in September of 2005, Nicolas managed various stores like Carl’s Jr. and El Pollo Loco.  “By working for larger chains,” states Nicolas, “I was able to learn the best ways to provide quality food and reasonable prices.”
Karen, who earned a degree in accounting in 1997 from the Master’s College, is now a Certified Public Accountant.  With her financial knowledge and Nicolas’s hands on experience in the restaurant business, together they make the perfect team.
Nicolas’ brother, Edi, is a vital part of our management team. He currently manages our location in the Valencia Town Center food court. Edi joined the management team just shortly after the doors opened in 1996 and has created many of the recipes.
There is so much to choose from on the menu at Cabo Cabana.  From tacos and quesadillas, delectable tamales and fresh tostada salads, to even a selection of items on the breakfast menu to satisfy your early morning Cabo cravings, you won’t be disappointed. At Cabo Cabana, they only use lean, marinated steak, USDA Choice, carefully hand trimmed and grilled to perfection.  Only California grown fresh chicken breast is used for charbroiled tacos and burritos.  And if you’re in the mood for fish and shrimp, only expect the best as their fish and shrimp is grilled to order and never precooked.
Be sure and try one of Cabo Cabana’s signature salsas, made fresh daily, using roma tomatoes, fresh herbs and fire roasted chilies with warm tortilla chips or to accompany your meal, or top your meal with tasty guacamole, made with Hass avocados and seasoned to perfection.  “From our salsas to our entrees, all our food is fresh and made to order,” states Nicolas and Karen.
