Have you ever come back from your travels to another country and tried to make something at home that you enjoyed while you were there?  How about something as simple as tacos, just roasted vegetables in Italy or a simple roasted chicken in France.  Were you successful?  I would venture to say that you probably were not.  It’s not because you don’t have the skills or the equipment to do it.  After all, sometimes it is just street food and how complex can that equipment be?
Have you thought about the fact that most other countries get their raw product from farm to the consumer in just a few days, and in most cases the next day after it has been picked?  All those open air markets in Italy and France, or in Southeast Asia have products so fresh that it can’t but taste good.  In America, markets are so worried about not selling their produce and meat before it spoils, but in the open market settings, they are more worried about having to lug it back to where they came from for surely it is not going to spoil by the next day.
So, if you get depressed about how your food is not turning out like you remember on your travels, try shopping at your local farmers’ market.  It’s a lot fresher and will taste better.  After you try that, and it still tastes bad, maybe I can help you figure out what is going wrong.  Just shoot me an email or talk to me when you come in.  I am usually expediting in the back.  So to answer the question, yes, food usually tastes better when you are vacation.
