If you’re like me when you go out to eat, you want it to be worth your while. When it comes to food, I look forward to eating places where I know there are people that put their heart into what they’re cooking. You can taste the difference in food that somebody made who chose the life of a cook because it is their life. It is what they know; it is what they are passionate about. A person who cooks only to earn a paycheck will never be able to make the same caliber food.
It is this kind of passion that you will find at Mixers from me, and my small, but dedicated staff. In no other dish is this best exemplified that the braised short rib with English pea potato croquette. It starts out with a fundamental element of cooking that is often underappreciated, the seasoning. The short rib must be seasoned properly and allowed to rest before cooking in order to penetrate the meat, which will result with an extremely flavorful final product. Once the meat is seared, and the vegetables sautéed, red wine is added and the braising begins. This is a long process that requires the cook’s full attention. The amount of the wine must be maintained at a certain level. The meat should be turned and basted periodically, so as to prevent it from drying out. When it is done the braising liquid should be strained over the meat and allowed to cool.
When you care about a single clove of garlic as much as you do a prime rib eye, it is evident in the food you produce. It is in this frame of mind that every one of our dishes is prepared. When a person is passionate about something, one of the best things to do is share it with other people.
