Since the early days of Middle Eastern and Mediterranean cuisine, pizza has existed to feed the mouths of ancient civilizations.  The earliest record of the word “pizza” appears in a Latin text from the southern Italian town of Gaeta in 997 AD, which stated that a tenant was to give the bishop of Gaeta “duodecim pizze” (twelve pizzas) every Christmas day, and another twelve every Easter Sunday — presumably as rent or a tithe to the Church.

In ancient days, many poor Italian housewives had only flour, olive oil, lard, cheese and herbs with which to feed their families, and they combined them in a traditional and delicious manner.  Pizza was a peasant’s meal.  Street vendors, typically young boys, walked the cities and towns with small tin stoves on their heads, calling out to attract customers.
