Thank you to Linda Fasan for sending us this delicious holiday treat and for being December’s contest winner!  There is nothing better than enjoying a delicious holiday treat, baked with love, to celebrate the most wonderful time of the year.  Here is the letter we received from Linda. 

When I first met my husband’s New York Italian family it was during the holidays.  Along with the lobster sauce, pasta, rice balls, broccoli rab and zeppoli that were being prepared in the grandmothers’ and aunties’ kitchens, there were Pizzelles. Pizzelles are a delicious, light, crunchy cookie with a slight anise taste, giving them a unique holiday flavor. Everyone had a Pizzelle maker in their kitchen.  Being a young German American woman, of course I was amazed by all of the delicious foods.  Needless to say, when we got married one of our presents was a Pizzelle maker.  Eight years later Pizzelles have been an annual tradition in our home. I hope that you can get your hands on a Pizzelle iron and enjoy some for yourselves.

Traditional Italian Pizzelle
3 Eggs
3/4 cup Sugar
1/2 cup Butter (melted and cooled)
1 teaspoon Vanilla
1/2 teaspoon Anise
1 3/4 cups Flour
2 teaspoon Baking Powder
In a large mixing bowl, beat the eggs and sugar.  Add the cooled butter, vanilla and anise. Sift the flour and baking powder together and add the egg mixture.  The batter should be stiff enough to be dropped by spoon.  The batter can also be refrigerated to be used later. Place the batter onto a Pizzelle iron and there you have it!  A delicious holiday treat!
