Poultry is Mary’s organic free-range chicken and duck from Southern California and includes a five-Step Animal Welfare Rating.
Our fresh fish and seafood is sourced using seafood watch, this program allows us to promote and feel good about using sustainable seafood.
Our menu items are made in house from scratch and pair perfectly with our extensive specialty craft beers and wines.
Our chef, William Brunk, is a Northern California native with a focus on seasonal, sustainable and local cuisine.  Farm to fork ingredients are used to execute his French/Mediterranean/Pan Asian faire in a “from scratch” kitchen.  His menu is inspired by his wife, Mary, son Sammy, as well as the last 20 years of working for and with fellow chefs.  “Having been raised in a traditional European brigade style kitchen, my cooks work very well as a team, have great communication and take pride into the product they produce while executing my vision,” states Chef Brunk.  “One difference in this kitchen at the Refinery is the fact that it is open to the public to watch the dance happen on a daily basis.” 
Built from reclaimed oak and knotty alder wood, softly illuminated with Edison Style light bulbs, this custom built space delivers a one of a kind look and feel for the Santa Clarita Valley. Food and drink menus have seasonality built into their cores, with new and tasty items appearing as the seasons change. Offering 22 draught beers and over 50 bottle choices, cicerone certified staff is eager to guide you through the many wonderful choices. Lager, Hefeweizen, IPA, Specialty Ales, Porter, and Stout are all served the way the brewer intended.

Newhall Refinery is located at 24258 Main Street in Historic Down town Newhall. They are open Tuesday through Thursday 11 a.m. to 10 p.m., Friday and Saturday 11 a.m. to 11 p.m., Sunday 11 a.m. to 9 p.m.  Closed Mondays.
