Eggs are classified as “super foods” and have been consumed as far back as 700 B.C. Columbus is believed to have carried to the New World the first of many chickens that are now related to our egg production. Eggs are loaded with nutrients and have many health benefits. Besides being incredibly nutritious they have lots of vitamins and minerals, which include Vitamin D, E, K, B6, Calcium and Zinc, as well as high-quality protein and antioxidants all for 70 calories.  The nutrients found in eggs help play a role in weight management, your muscle strength, brain function, eye health and so much more.

Although eggs are high in cholesterol, it is important to keep in mind that cholesterol in the diet does not increase it in your blood, so it all evens out. Eggs do contain Choline, which is an important nutrient most people do not get enough of, and is used to build cell membranes and has a role in producing signaling molecules in the brain, along with other functions.
Eggs are high in protein with all the essential amino acids in the right ratio. Did you know eggs do not raise your risk of heart disease and may help in reducing the risk of strokes.
So with all this valuable information being said, studies clearly show that eating up to three whole eggs per day is perfectly fine and satisfying.
Eggs really are nature’s perfect food, and they are cheap, so easy to prepare and can go with almost any food and taste delicious!
Do you know how to tell if an egg is raw or hard-boiled?  Just spin it. If the liquids have set into a solid, a hard-boiled egg will easily spin, but, the moving liquids in a raw egg will cause it to wobble.
It has been said that an egg will stand on its end during the Spring Vernal Equinox around March 21…one of the two times of the year when the sun crosses the equator and day and night are equal in length. Depending on the shape of your egg, you just might be able to stand it on its end other days of the year, too! And of course, you can have egg on your face! The whites do tend to be drying!
We use eggs in so many celebrations and of course, Easter, and in the month of May we observe National Egg Month. So just like the American Egg Board says, the Incredible, edible egg, hey it’s worth celebrating.
