 When you are as passionate about food as we are, chances are you’ll find yourself trying new and unconventional dishes to please your palate. Say Hello to Pancita or best known as «pork belly”.  This is one of the most unique dishes here at SABOR and has quickly become a favorite among our guests that enjoy good food. What you don’t know about it is that it took us several months of testing to come up with the perfect recipe… and we finally did.  Fortunately for you this succulent dish is here to stay.
The process starts with removing the excess of fat from the meat, then rubbing it with salt and spices followed by 12 hours marinating while wrapped in plastic in the refrigerator, once this period has completed the cooking process begins, we bake it for another nine hours at a very low temperature for a perfect crisp glaze on the outside and perfectly tender in the inside; this literally will melt in your mouth. But it doesn’t stop here, when is time to serve it to you, we add our signature Tamarindo sauce and let it simmer to absorb the tangy and sweet flavors of the tamarind then.  We serve the Pancita over lentils with a side of fresh Jicama, tomatoes and avocado to complement this amazing dish.
