Wolf Creeks’ New Latin Flare
For the month of August Wolf Creek Restaurant is introducing a new Brewer’s Menu that has a Latin flare. Residents of southern California are very familiar with summertime fiestas and to incorporate this theme our favorite pack is featuring some crowd favorites that is sure to keep you happy all summer long. Favorites such as the Mexican Corn on the Cob or as so many know it, “Elote”. This recipe includes Fresh roasted corn on the cob, topped with cilantro pesto, butter, traditional spices, fresh cilantro, lime, and cotija cheese. Would you prefer something lighter? Then try the Mexican Ahi Salad, a dish made with Fresh, diced Ahi, tossed in Southwest spices, baby greens, quinoa, red peppers, corn, green onion, avocado, red onion, pomegranate seeds, and topped with a lime Citrus Cilantro dressing. Nothing says Mexican cuisine without tostadas. The Tinga Tostadas are three corn tostadas, topped with shredded lettuce, chicken tinga, sour cream, cilantro, avocado, diced tomato, and cotija cheese. This recipe is a great as an appetizer for the table to share.
Speaking of sharing, Wolf Creek Brewery will be bringing back the award winning Belgian duo: Surfin’ Monks (rustic Cali IPA brewed with Belgian candi syrup and dried sweet orange) and the Barrel Aged BBB (triple aged for a year in chardonnay barrels with tart cherries where the oak and vanilla blend with the cherries to create the sweet complexity). Later in the month the El Lobo Amber will be available. This Mexican-style amber lager has a great malty flavor from Vienna malt and is balanced with a touch of hops. It is aged for six weeks for a smooth, refreshing beer. Stop by on Tuesdays to try any of these beers and enjoy live music at the Brewery. If you cannot make it Tuesday than come by on Friday night for another chance to enjoy live music and food trucks.
